The fryer counts most, then cooking fats, then dressings, bread and sauces. - **Seed Oil Free**: Clean fats in the fryer and for cooking, with at most one minor exception or gap in dressings, bread or sauces. - **Mostly Clean**: Mostly clean fats, but a seed oil or an unconfirmed answer in one important area. - **Use Caution**: Seed oils or unconfirmed answers in several areas, often including the fryer. - **Contains Seed Oils**: Seed oils in most of the areas audited. "Verified" means a listing was reviewed with a cited source. It is not a rating. Ratings across the 1,748 verified restaurants: 699 Seed Oil Free, 397 Mostly Clean, 535 Use Caution and 23 Contains Seed Oils; the rest are not yet rated. **Clean fats:** olive oil, avocado oil, beef tallow, duck fat, lard, butter, ghee, coconut oil. **Seed oils:** soybean, canola/rapeseed, corn, sunflower, safflower, cottonseed, grapeseed, rice bran, and generic "vegetable oil" blends. --- ## Coverage - **New York City** (deepest coverage): 254 verified restaurants (162 rated Seed Oil Free).
